2019 CABERNET SAUVIGNON TASTING NOTES:
Grapes from our Estate vineyard were hand harvested late in order to achieve full phenolic ripeness in this relatively cooler vintage. Hand sorted and destemmed, the grapes were left to cold soak prior to completing primary fermentation in tank. Pressed off as separate lots (young vine free-run, old vine free-run and pressed wine) then allowed to settle for 48 hours to remove heavy lees. Racked to barrel to complete Malo-Lactic fermentation. Aged for a total of 24 months before being bottled unfined and unfiltered.
Classic nose of blackcurrant, leather and tobacco with an ethereal lifted eucalyptus note. Dry, medium alcohol, medium plus acidity, medium fine-grained tannins. The palate is established by beautifully integrated oak flavors of baking spice and cocoa that are followed by rich dark fruit qualities. Decant now or drink 2022-2026+.
