Finally we brought all of our grapes in. We did not leave any grapes for icewine this year. Cabernets have just started fermenting. For the last 2 years, Icellars is doing 100% of alcoholic and malolactic fermentations with wild yeast, meaning we do not inoculate with commercially produced yeast products. It certainly takes longer to start and finish fermentations but we believe the wine just tastes better and we took off another ingredient from the receipt.
