2019 CABERNET FRANC ICEWINE TASTING NOTES:
The first Icewine we’ve produced using our estate grown Cabernet Franc. The fruit was hand harvested on Dec. 19th at -12°C before being meticulously sorted. After an overnight pressing process and the intentionally long and steady fermentation was halted at 152 g/L of residual sugar and 13.6%Alc/vol. The result of this is a style of icewine that is relatively less sweet and more balanced than the traditional Niagara Icewines.
Pretty nose of apricot, fresh strawberry and blood orange. Sweet without being overly viscous followed by a balancing gleam of acidity. Flavors of cherry and walnut mingle on the palate. Drink 2020-2025+
